The only actual cooking that is required is heating the balsamic vinegar, quick marination, it’s that simple! Sounds too simple? Yes, it does, however, the flavors are complex and elaborate which works as a great palate cleanser. Awesome way to start the day off as the last meal of the night.

Enough of me going on about balsamic infused strawberries, let us get into the recipe. I’ll share with you one of the best and simplest ways to serve strawberries. This is also a perfect dish to put together just for yourself.

This is a dish I’ve done many times. The family loves it, and this recipe has become a strawberry summer dessert treat when we go strawberry picking.

There are only 3 ingredients for this balsamic strawberry recipe, well 4 ingredients if you count the Greek yogurt. Well, 6 ingredients if you also count the mint garnish and dusting of icing sugar.

Prepping The Strawberries

  • Prepare The Strawberries – Wash and hull the strawberries, the best way to hull them is to use a potato peeler that has a pointed tip. Then place the hulled strawberries into a heatproof glass container, if you don’t have a glass container, a porcelain bowl will work as well.

Chefs Pro Tip Hulling the strawberries, hold the strawberry in your left hand (for right-handed people). Hold the peeler in your right hand, hold it down by the end, and use your right thumb as a guild.

Press the peeler into the top of the strawberry just under the green leafy top and turn the strawberry with your left hand 360°. The green top will pop out, it is that easy.

This technique will only remove the green top and core of the strawberry, so you won’t waste any of the strawberry’s fruity flesh.

Macerating The Strawberries

  • Aged Balsamic Vinegar – Place the balsamic and sugar into a stainless steel pot and bring to a boil to dissolve the sugar. Simmer for about 1 minute, then pour the hot balsamic over the strawberries.
  • Let the balsamic strawberries sit for 10 minutes, stirring 2 or 3 times. By now the balsamic vinegar should have cooled and worked its magic and infused with the strawberries.

Chefs Pro Tip — To get the right infusion balance of sweet and zingy flavor leave the strawberries in the marinade for no longer than an hour. Going over an hour and the balsamic vinegar could overpower the strawberries.

Plating Balsamic Infused Strawberries

Easy Plating – Spoon the Greek yogurt onto the plate in a circle. Remove the strawberries from the balsamic and place them on top of the yogurt. Garnish with mint and dust with icing sugar. It’s that simple.

There will be balsamic vinegar left over, it will have been infused with the sweet strawberry flavor. Which is excellent for making a strawberry balsamic vinaigrette. So don’t discard the leftover balsamic vinegar.

There are many variations you can do with balsamic infused strawberries. You can adjust the ingredients to suit your dietary or lifestyle choices. Here are some ideas that won’t change the integrity of the dish too much.

  • Using Other Berries – You can use other berries that are in season. Cherries, blueberries, and blackberries are some options. I wouldn’t use raspberries as they are delicate and could fall apart in the marinating process.
  • Other Sweeteners – You don’t need to use sugar other options could be honey, maple syrup, high fructose corn syrup, or even golden syrup. With golden syrup, it can be overly sweet, so add only a teaspoon or 2.
